I have a 12 volts battery on 75 amps is it ok to put it on 75 ? or should i reduce it ... and if yes how

Unsure of what you mean.

The 'load' determines how many amps are used. load is anything that uses power.

If you mean your electrolyser(load) is drawing 75 amps, you can and should reduce that by using distilled water and less catalist.
