Will using AC instead of DC affect my cell's results in any way?

Study a lot more before you do any experiments. You obviously need to read a great deal ! Each cell should have approximately 2 volts between each plate. So 12v verse's 120v makes a great deal difference in the cells size.

Sorry, let me apologize.

Disassociating water, be it 120v or 12v will do just that, disassociate water. How well it is helped along in other ways with design, electrolytes and tuning of the electronics will determine the affects. Obviously, if you have 120v's you will have more HHO, but will have a much larger cell compared to a 12v cell.

I never said straight out of the wall. I was planning on using a step down transformer (rewired MOT) without a bridge rectifier to go from 120v to around 12-13v AC for my 7 plate cell

AC of 50-60 Hz will produce little to no HHO. Electrolysis needs a direct current. It has been proposed that a "resonant" frequency exists to create HHO, but no one has been able to pin it down. I don't see how it could exist.

Yes,
you can use even a simple low amp transformer from Radio shack to get your DC to get small amounts of HHO

The transformer i speak of will turn AC to DC (120AC to 3 - 24 volts DC with very low amps)
What are you going to use it for?
