I see on ebay some 8"x8" 316L stainless steel plates, is it better to go bigger and use only 7 plates +NNNNN-? I read somewhere that low amp draw produced the best gas..or should one go with more plates?

Using 5 bi-polar (N) plates will work, but 6 (+NNNNNN-) is more efficient.
The ideal target area for gap voltage is 2vdc or less.

larger plates tend to be better if you have the room :)
