Im making a 21 plate system both in wet and dry cell. Does it matter if all the plates are the same thickness?
I would like to experiment with both for production.

This is the setup -nnnn+nnnn-nnnn+nnnn- Ill be making my - and + in 1/8 in thick 304 or 306 stainless and my N plates in 1/16

This thickness is unnecessary. Bipolar plates need to be thinner 20 gauge .0375 inch. Your - and + can be 18 gauge .0500 inch. I would also suggest you use 316L it is much better and will give you better results in the long run.

i think 5 nnnnn will be better than 4 nnnn in the long run

Missed that one. Good catch! Definitely want to use at least 5 or 6 bi-polar plates per stack. Using only four will give you 2.76 volts per cell .

Carter, how'd you miss that one???????????????????:D

Personally I like thicker electrodes, and very thin neutrals (All the neutrals do have to be the same thickness)
1/8" is overkill, but if you already have them i can't think of any down sides to thick electrodes.

If you already have the 304ss you should condition them and be real careful not to overdrive them. But like Old Gold said 316L is a better direction
