I am still in the discovery stage, testing conductivity, want to use AC, what are the draw backs versus DC?

Pure AC current will not work at all, period. If you wan't to go this route, you will need, at minimum, to employ a bridge rectifier. This will effectively change the AC (assuming 60hz AC) to 120hz pulsed DC.

That helps a lot, I've been trying to use the wrong power source, even though I converted a cell phone charger, this gives me some ideas. Are batteries the best route as a power source?

You will probably eventually blow the charger as its low amps and electrolysis tends to use a lot.

A car battery and a high amp charger for it would be ideal.
